I got this recipe in an email from kraftfoods and decided to give it a try. It was delicious, easy, and took less than 15 minutes. You can also sign up for their free recipe magazine. It comes 5 or 6 (I can't remember) times a year. I don't always find a lot of recipes that we like, but have found a few.
Creamy Tomato Tortellini
- 1 pkg. (9 oz) frozen cheese tortellini
- 2 cups frozen broccoli
- 1 can (14.5 oz) Italian-style diced tomatoes, undrained
- 4 oz cream cheese, cubed
- 1 tsp. Italian seasoning
- Grated parmesan cheese (optional)
Cook pasta as directed on package, adding broccoli to the boiling water for the last 3 min. of the pasta cooking time.
Meanwhile, cook tomatoes in large skillet on medium heat 5 min. Add cream cheese and Italian seasoning; cook 2-3 min or until cream cheese is completely melted and mixture is well blended, stirring frequently.
Drain past mixture. Add to tomato mixture in skillet, mix lightly. Sprinkle with Parmesan cheese.
